Dark Arts Whiskey House
Lexington, KY · John & Shauna onsite
Where we are.
Both of us are heading to Dark Arts Whiskey House in Lexington’s Distillery District for two distinct experiences in the same visit — the Alchemical Journey guided tasting through the core lineup, followed by the Thief from the Barrel session that pulls pours straight from the resting casks. Heavily-finished American whiskey, hand-bottled and labeled in the Alchemy Lab.
Expect coverage on The Cut Daily across the visit, plus a Beyond The Cut episode walking through what the Alchemy Lab format tells us about the next generation of American finishing programs.
The detail.
What is Dark Arts Whiskey House?
Dark Arts Whiskey House at 1170 Manchester Street in Lexington, Kentucky is the blending, re-barreling, and finishing house specializing in heavily-finished American whiskey. Co-founded in 2023 by Macaulay Minton (President / Chief Alchemist; UK-trained in distillation, brewing, and winemaking) and David Peet (CEO). The brick-and-mortar Brand Home opened June 2025 in the Lexington Distillery District; the operation is the newest member of the Kentucky Distillers’ Association.
Dark Arts runs an Alchemy Lab tasting and bottling experience — globally-sourced wood staves (Toasted French Oak, Japanese Mizunara, South American Amburana) plus Armagnac, Cognac, and Madeira casks. Releases include ‘Empyrean’ and Single Barrel Bourbon. The house is one of the more interesting heavily-finished American whiskey programs operating on the Kentucky Bourbon Trail right now.
Two stops, one visit.
Each Dark Arts experience tells a different side of the same story — the philosophy first, then the barrels themselves.
Alchemical Journey — Guided Tasting
The foundational session. A curated tasting of the four core Dark Arts whiskeys, walked through by a Spirit Guide as a study in contrasts — grains, woods, finishes, and the philosophy behind each transformation. Built to introduce how Dark Arts thinks about whiskey before the deeper barrel work.
- Four ½-ounce pours from the core lineup
- Spirit Guide decodes the blending and finishing decisions
- The contextual setup for the rest of the visit
Thief from the Barrel
The deeper session. Pours drawn directly from one of fifteen resting barrels using traditional copper-thief methods. Every pour is unfiltered, single-barrel, and never replicated — the bourbon you taste here only exists at this barrel, on this day. Optional bottling lets you take a 375 ml or 750 ml home with a custom label.
- Four single-barrel pours, pulled with a copper thief
- Choose from fifteen resting barrels, 5–13 years old
- Optional bottle-your-own with custom Alchemy Lab labeling
