Both of us are at Whiskey River in Parkville. Pizza on the table, the bourbon list working harder than the kitchen, and the Colonel’s Lounge crew running the kind of evening where dinner turns into a tasting.
The visit doubles as John’s birthday — friends in the Colonel’s Lounge upstairs, with bar manager and craft mixologist Jameson Huckaba running the room. Huckaba’s the master behind “The Colonel” — his Missouri riff on the classic old-fashioned, named for Colonel Park, the founder of Parkville. A mystic of the craft when the room calls for it.

What is Whiskey River Pizza & Pub?
Whiskey River Pizza & Pub in Parkville, Missouri runs one of the deeper bourbon programs in the Kansas City suburbs alongside its pizza menu. Founded by Cory Stipp (also of Quay Coffee in the River Market and Apogee in Olathe), the pub anchors the Creekside Development in Old Town Parkville.
The Colonel’s Lounge upstairs is the speakeasy-style private whiskey bar — entered through a hidden door behind a bookshelf near the hostess stand. The signature cocktail ‘The Colonel’ features Ben Holladay Bottled-in-Bond, in a nod to the Weston neighbor.
